Seafood Spaghetti

It’s rare that I see something on a cooking show that I want to make, but on our way to Chicago a few weeks ago on Jet Blue, there wasn’t much else on when I stumbled upon Emeril live. I’d actually never seen his show before, so I stopped for a few minutes to see the dish of the show. It turned out to be a special with the author of On Top of Spaghetti, and they made some awesome looking dish that looked a lot like Meat Pasta, but with seafood. The chefs blew me away when they dropped shrimp shells in with onions and hot peppers to make the sauce for the dish. What? That’s crazy, and possibly delicious! If that wasn’t enough—they didn’t even cook the seafood before dropping it into the cooked pasta. What? That’s incredible.

So last week before a 16 mile run, we gave the dish a shot, but doubled the quantities of seafood and used whole wheat linguine instead of spaghetti. It turned out rather well, but I think it could have been greatly improved by adding some sausage. Maybe like a pasta paella? Drop in some saffron… I don’t know. Anyway, here’s how it looked at completion:
